Default fees and overselling

I just arrived home from Salt Lake City after an amazing snowboard/ski vacation and witnessed a few things, mainly with Delta but I am sure with other airlines too

firstly, fees: it seemed that Delta was charging for everything except for nonalcoholic drinks, granted everyone knows this and its on their website, while first class pass. get 3 free check in bags the majority have to pay $20 for the first and $40-60 for the second which is a pretty unfair practice especially to destinations where many people bring 2 bags (sports equiptment etc)
but the main issue with me with their fees is that you MUST use a credit/debit card, they won't accept cash, its a major airline (biggest in the world) and they wont accept cash, there was a group of 14yr old(ish) that ordered some food and tried to pay with cash and the flight attendant took the food away since none of them had a card

issue #2, overselling
On my way out to SLC from EWR there was an overselling situation by 2 people and they promised to get the passengers there on the next flight with a $400 delta dollars incentive.......well I met up with the guy who didn't make the flight (he boarded the plane and all the seats were taken so he had to leave) and he was telling us that he didn't get on the next flight and had to wait till the next morning because the nxt flight was oversold and the computer system showed he was on the original flight

over dinner, my friend who came over from singapore and his brother who flew in from london (both on delta to SLC) were telling us about how the flights were oversold

lastly, when leaving SLC to EWR we kept hearing announcements that there is a possible overselling situation on flight # to Boston, flight # to denver, flight # to Newark............i counted at least 4 different announcements about possible overselling on flights going to different locations

so with this overselling of flights and charging all these fees, how is it that they are "loosing" money and not making obscene amounts of money and profits?
